oil vs. table
"I am not sure if I want to make table olives as well as oil; is this going to be a problem when I choose my trees?"
There are a number of olive varieties that are excellent for both pickling and olive oil production. They are noted as "dual purpose" on our variety chart. You can also make table olives from an oil variety, or oil from a table variety. The primary difference is that the table varieties are larger and have more flesh. Varieties used mostly for oil will tend to have higher oil content.
