time to production
"How long will it be before I have olives to harvest?"
The usual estimate for medium-high-density (approximately 200 to 300 trees per acre) is that you will have a small but usable crop at five years and reach full production at eight to ten years. This would be in a well-managed, irrigated orchard with no weed competition. In a super-high-density Arbequina orchard (600 to 900 trees per acre) you will have a decent crop in three years and reach full production in five.
